It is a seasoning made from Arbequina olive oil macerated with natural black garlic, with a mild and very aromatic taste. Black garlic is an ingredient originally from Japan that is also already produced in Spain. This garlic is sweeter and less intense than our usual white garlic. Thanks to its natural fermentation process, its smell is reduced and its taste becomes `umami`, a term that means `delicious` in Japanese. For all these reasons, black garlic is the perfect substitute for white garlic in our kitchen. This oil has a distinct garlic and licorice flavor. This makes it ideal for flavoring chocolate or cocoa emulsions. It can be added to ganaches with a high cocoa content, as well as sweet sauces whose main ingredient is cocoa. This is just one of the recommended combinations. It perfectly complements juices and sauces for meat stews such as oxtail or game. It is also ideal in combination with more neutral oils for preparing candied vegetables with a distinctly bitter taste such as asparagus, endive or beets.
