There was this opera `Norma` by Vincenzo Bellini that caused such an enthusiastic response in Catania. From then on, the term `Norma` was the greatest compliment that could be given. This sugo with roasted eggplant, tomatoes and chili pepper justifies this compliment. Pasta served with this sugo, salted ricotta and fresh basil brings Sicily very close.
