The particularly small lentils that grow on the Colfiorito plateau in Umbria are among the best in Italy. Their color varies between green and red. Thanks to their tenderness, they have a short cooking time of around 20 minutes. Their shell remains intact during cooking. Their taste is elegant and aromatic.
