The char is a salmon fish. In terms of body shape it is comparable to trout. Char have high demands on the water quality of their habitat. You need cold, oxygen-rich water. The delicately translucent golden yellow roe is made only with salt (Malossol) and without any preservatives. A rarity that is not available outside of the season.
