This Hon Mirin is only brewed in small quantities and only raw ingredients from the Mikakawa region (Aichichi Prefecture) are used. As a real Hon Mirin should be, this Mirin consists of only 3 ingredients: mochigome (glutinous rice), koji rice and shochu. Its aroma enhances the taste of dashi and other condiments. Kokonoe Brewery has specialized in mirin for approximately 250 years and brews its specialties in the city of Hekinan, a center for food manufacturers producing shoyu, miso, vinegar, etc.
