Unagi sauce has its origins in Japan and was traditionally used to accompany unagi (pickled and roasted eel). The sauce is a seasoning sauce that is ideal for use in suhi and sashimi cuisine. The sauce is made mainly from soy sauce, mirin (a sweet rice wine), sugar and a type of dashi (Japanese fish broth). Unagi, the pickled and roasted eel, has a long history and in the years 1603-1868 was one of the more expensive and luxurious foods that often only the wealthy could afford. In modern times, Unagi has lost its luxury status and is accessible to everyone. It is still a very popular dish and the unagi is often served with rice. The Unagi sauce from Kikkomann is versatile in Japanese cuisine and is often used for seasoning, refining and marinating; there are no limits to creativity.
