Fabada is a stew made from white beans and originally comes from the Asturias region of Spain around the 19th century. In addition to the main ingredient, white beans, a fabada typically contains pork belly, black pudding, paprika sausage, onions and garlic. Fabada comes from the word faba, the Asturian term for beans, and can be equated with the term `bean dish` in English. The beans must be soaked covered with water for at least eight to ten hours. It is a long preparation process; first the beans are slowly cooked with onions for around 2 hours. Then the onions are removed and the other ingredients, such as pork, black pudding, paprika sausage and spices, are added. A lengthy process in which the beans can also quickly fall apart. Here you are offered a classic ready-made fabada, which only needs to be evenly heated up and then enjoyed with a delicious piece of bread.
