Miso is a fermented soybean paste that is used in soups, sauces and as a seasoning. It consists of soybeans, rice, salt, rice yeast and spices. There are different types of miso. The darker the miso paste Akamiso is, the higher the salt content and the more intense the aroma and taste. Light Miso Shiromiso, on the other hand, tastes more sweet.
