The addition of storico refers to the breed of white working cows, Razza Modenese, which had almost become extinct in the region but was re-bred due to its high quality meat. Appennino only uses this meat for its ragu, which is equivalent to the German word Bolognese sauce, as it is far tastier than normal beef. This product has become a BOS FOOD favorite because, although we can cook well, we no longer make our Bolognese ourselves.
