Nicos Psaltiras processes Koroneiki olives. In addition to his own olives, he only uses those of his neighbors, friends and relatives. The aroma has green grass notes and a pleasant spiciness. The Mani, with its dry, hot climate and barren soil, demands a lot of effort from the olive farmers for a low yield.
