The hickory tree, which is native to North America and Asia, bears pecan nuts. The shape of the kernels indicates that they are related to walnuts. However, the pecan is more elongated, has a firmer consistency and is much sweeter in taste. It has the same four-part basic shape, but its soft shell is much easier to crack. Pecans are particularly popular for baking and cakes, biscuits and cookies. However, a large part of the harvest is roasted and salted. They are also used as a source of cooking oil and are used to make nut flour. Store in the refrigerator or freeze.
