Cous-cous refers to both the grain and a national dish of some countries in North Africa. A mixture of semolina and flour is moistened and then pressed or rolled. The traditional method of preparing cous-cous is steaming. It can be served as a side dish or mixed into salads. Cous-cous can also be used for casseroles or desserts.
