Blonde chocolate is a completely new creation from Valrhona. The texture of the Dulcey couverture is creamy and indulgent. Dulcey goes particularly well with coffee, caramel, hazelnuts and less acidic fruits such as mango, banana and apricot. Its biscuit-like, mild sweetness leaves behind distinctive notes of shortcrust pastry with a hint of salt. This new chocolate family was created by a happy coincidence. Frederic Bau, from the Ecole du Grand Chocolat Valrhona, had simply forgotten white Ivoire chocolate in the bain-marie. For years, it was constantly being developed and tried out and in the end this unique product was created. An enrichment for the patisserie world.
