The olives that give this oil its distinctive taste come from trees that are over 100 years old. This oil is ideal for all types of braised dishes and especially for salads or carpaccio. Hazienda Pinarez from the 2003 vintage was rated 7.8 out of 8 possible points after the organoleptic test (tasting and chemical analysis). Such oils rarely make it onto the market. The aromas of green banana, grass and artichokes develop a pleasant nutty note when heated. The olive trees are grown in the southern outskirts of La Mancia - famous for Don Quixote and Don Vega. This area is still very original and unpolluted.
