`Low Intervention` wine from the PIWI (fungus-resistant) grape variety Cabernet Blanc. Amazingly, the grape variety was bred from two red grape varieties Cabernet Sauvignon and Regent in 1991 by the Swiss Valentin Blattner and propagated in Neustadt an der Weinstrasse and introduced to the market in 2010. Philipp Kuhn has had this grape in his farm since 2010. Its taste, structure and complexity are reminiscent of Sauvignon Blanc. All PIWIS are very resistant to fungal diseases such as powdery mildew and downy mildew and only require 1/3 of the plant protection of conventional vines. The must was matured in amphorae or in old wooden barrels. The part in amphorae was fermented and stored with whole berries, i.e. on the skins. The wooden barrel part was not. No cooling, no additives. Storage on the full yeast for 1.5 years. Bottling without filtration in a naturally cloudy state. Marginal sulphurization (just one-fifteenth of the normal amount). No residual sugar. Complete malolactic fermentation to keep the wine stable in the cloudy state in the bottle.
