Cabernet Sauvignon. Sour cherry and cassis on the palate with a slightly peppery note. Ideal with a briefly fried piece of meat. The philosophy of Jean and Caroline Panis is to produce full-bodied, intensely fruity wines from ripe, low-yield grapes from environmentally friendly cultivation. The Minervois is famous for its powerful but elegant red wines, which are influenced by the Mediterranean Atlantic climate. The Chateau du Donjon also owns some vineyards in the AOP Cabardes, west of the Minervois, which, at just under 600 hectares, is one of the smallest and least known in the Languedoc.
