The Paccherini are bronze-drawn and slowly dried at a low temperature to preserve their aroma and quality. They are slightly smaller than the classic Pacchero format. According to the recipe of the Michelin-starred chef William Zonfa, the Paccherini are accompanied by a porcini mushroom distillate, an asparagus salad, a saffron cream from LAquila DOP and a juniper-smoked ricotta.
