The Beluga (huso huso) is the largest of all sturgeons and can reach a length of up to 6 meters. It has now become very rare in the Caspian waters. The color of the roe ranges from light gray to almost black. The most sought-after is the light gray grain. The Beluga produces the largest grain caviar and with a weight of 300 kg it can produce a caviar yield of around 18 kg. It is characterized by a fine, exquisite aroma.
