Cogna is a recipe with ancient origins, prepared in the old farms of the Langhe. At the end of summer, the grape must from the first harvests is slowly boiled and enriched with quince, Madernassa pears, walnuts and hazelnuts to create a delicious compote to enjoy during the winter. We also find it wonderful in the summer with cheese and ham.
