The shiitake mushroom is the most popular edible mushroom after the button mushroom. The shiitake is also called the meat of the forest and is very popular in vegetarian cuisine. The smell is aromatic, the taste is like leek with a strong aroma.

Soak the mushrooms in water for approx. 60 minutes, drain off the soaking water and dispose of it. Wash and clean the mushrooms under fresh, running water, avoid contact with other foods when raw. Boil in fresh water for at least 10 minutes. Drain the water, season to taste and fry in a wok with onions and soy sauce, for example. Store in a dry place.
