Sancho is the name of a low citrus tree. It is the source of the Japanese mountain pepper, which has a very fresh aroma reminiscent of limes and a well-developed spiciness. It is ideal for seasoning satay and miso soups and noodles or meat and poultry. Lemon pepper supports the special Asian taste. The mountain pepper is a component of the popular table spice shichimi toogarashi, together with chilies, citrus peel, sesame and poppy seeds and seaweed.
