This pepper from Cambodia is an absolute rarity. The real red peppercorns (piper nigrum) are fully ripe fruits that taste fine, almost sweet and fruity. The inner core produces a strong, lasting spiciness. Kampot pepper seasons pork, chicken and fish and is also suitable for fruits such as ripe mangoes and strawberries. Since the grains are too soft (and too good) for the mill, they should only be crushed in a mortar shortly before use.
