Converts sugar into invert sugar. Concentrated enzyme complex produced by the yeast S. cerevisiae. Accelerates the process of breaking down sucrose into glucose or dextrose and fructose, i.e. into invert sugar, without the addition of acid or heat. Invert sugar is obtained from various sugars such as muscovado and allows products to be sweetened by enriching them with their own sugars. Used in pralines to make pralines with liquid inside. Mix with the sugar or fondant and leave to rest at room temperature. To enrich the sugar in various products, soak the product under vacuum.
