Gol Gappa, unbaked with spicy Marsala. Gol Gappa Pellets: WHEAT FLOUR, salt. Spicy Dip Masala: Rock salt, mango powder, cumin, black salt, asafoetida, black pepper, mint, cardamom, clove. Method: Gol Gappa Pellets: Add 1 litre of cooking oil to a deep pan and heat. Once the oil is hot, add the pellets. Within a few seconds, each pellet should expand into gol gappas. Remove each expanded gol gappa from the oil and place on a kitchen paper to drip off excess fat and allow to cool. For the filling: Boil, peel and chop 2 small potatoes. Add boondi (chickpea pearls) to the spice mix water. Add 100ml tamarind sauce to a bowl. Puncture the top of each expanded gol gappa to form a small opening. Gently add some potato and then spoon in some tamarind sauce. Finally, pour in some spice mix water and serve. Store in a cool, dry place away from strong odors.
