DE-OKO-001 Hay milk cheese from the village cheese dairy Geifertshofen. The `Geifertshofener Classico` is a cheese that has been ripened for at least 12 months by mites and is made from fresh hay milk with a natural fat content. In the brick vaulted cellars it is regularly treated with salt water and red wine yeast so that a partly rustic/wild natural rind with natural cheese mites develops. The cheese mites give the `Classico` a racy, spicy aroma as it ages, but it still has the caramel-like melting quality typical of the village cheese dairy Geifertshofen. It has a few small, round holes. To go with the `Classico`: rich and dense red wines from the barrique or Beerenauslese - simply wonderful - a top product for cheese lovers!
