With this base you can create your own favorite version of carbonara: - classic with the addition of crispy guanciale (pork cheek) - with seafood, fish and shellfish - with seasonal vegetables . The sauce can be kept warm without the egg curdling. 40g of sauce is enough for 80g of pasta.
