Together with the Montee de Tonnerre, the most racy of the 1st Crus. The steely acidity is supported by a great minerality. Great storage potential! The terroir of Chablis is characterized by a high proportion of Kimmeridge chalk in various forms, which gives the wines enormous minerality and a steely acidity and is also responsible for the long storage capacity. All of the winery`s efforts are aimed at expressing the subtle variations of the best individual sites. 40% of the 1st Cru are stored for 12 months in used barriques. William Fevre is the largest owner of Grand Cru sites in Chablis with 15% of the 100 hectares.
