This dashi concentrate is made from crystal soy sauce. To intensify the flavor of the katsuobushi, additional bonito was used, which was not filtered out, to make the taste stronger and the concentrate more economical. Can be used like other shiro dashi, but also as a dip (slightly diluted) or dressing. Try the popular Japanese mayonnaise mixed with this dashi. The slightly `smoky` flavor of the katsuobushi not only goes well with Japanese dishes, but also gives western fish soups that final kick. As a marinade for grilled vegetables or white asparagus.
