AT-BIO-402 Pet Nat Bambule M 2022, an organic sparkling wine made from Pinot Blanc and Muscat. Bottled full of joie de vivre and stubbornness by Judith Beck. Pet Nat (short for `Petillant Naturel`) is a sparkling wine that is made using an almost forgotten method of sparkling wine production. No additives are necessary, neither sugar nor sulfur. All that is needed are grapes that are harvested when fully ripe. Alcoholic fermentation is entirely spontaneous. The wines are bottled before the end of alcoholic fermentation. In order for fermentation to continue in the bottle and carbon dioxide to be incorporated, there must be enough sugar in the fruit. Too much fermentation, on the other hand, will cause the bottle to burst, which is why great sensitivity and experience are essential here. The result is unique, complex and exciting sparkling wines.
