A white wine made from red grapes. It is produced like a champagne base wine, the grapes are pressed whole (not destemmed and mashed). Gentle pressure is used to press only the light, clear juice from the inside of the berry. The must is cooled and fermented like white wine. The bouquet and taste reveal the relationship to Pinot Blanc. The partial malolactic fermentation softens the acidity a little and allows melting aromas to develop. The wine is characterized by ripe fruits such as apples, pears, peaches and melon, accompanied by a fine lime aroma and minerality. Served at 6-8°C, it goes very well with summer salads, fish, shellfish, pates and many starters.
