In addition to yeasty, fruity components and wild aromas, the Petillant Naturel creates a high vibration density on the palate of the wine lover, interspersed with a pleasant saltiness. In contrast to normal, bottle-fermented sparkling wine or champagne, Petillant Naturel only ferments once. This means that the fermented must is filled into the bottle, where it ferments to completion. Yeast and turbidity are not removed, but remain in the bottle, so the resulting sparkling wine is neither sulphurized nor dosed with sweet reserve - hence the addition of Naturel. The extremely small amount of SO2 contained in the PN - hence the statement `Contains sulphites` on the label - was created during the fermentation process and is therefore also `natural`. The yeast remaining in the bottle stabilizes the sparkling wine, together with the pressure of the naturally occurring carbon dioxide. Yeast and turbidity settle at the bottom of bottles that are left standing. PN lovers want to see this, which is why Stahl used uncolored bottles for his Pet Nat. If the bottle is moved vigorously, the sediment mixes with the otherwise clear sparkling wine - this is also something that Pet Nat fans want. They want to taste the particularly pronounced yeast note in the drink. Pet Nat is therefore not filtered, not disgorged and usually not dosed. This also means that PN is absolutely dry and has less alcohol than `normal` bottle-fermented sparkling wines such as champagne.
