Gewurztraminer from the terraced vineyards of Winningen. The whole intact grapes with the stems were spontaneously fermented in stainless steel for 12 days (Maceration Carbonique or intercellular fermentation). Gently pressed and fermented completely dry in used 500-litre wooden barrels. Bottled after 15 months on the full yeast without filtration and with minimal addition of sulphur.
