Tete de Moine was first mentioned in 1192 as a cheese from the monastery of Bellelay. Old documents show that this cheese was used as a means of payment. It is not cut, but scraped. The easiest way to scrape it is with the Girolle - a device specially designed for this purpose. The top rind of the cheese is removed. Rosettes can be scraped from the cheese by turning the Girolle. Their appearance is vaguely reminiscent of the tonsure of monks, which probably led to the name monk`s head. The Tete de Moine has a pronounced spicy and delicate taste.
