The Ursalzkase is a semi-hard cheese made from silage-free Alpine raw milk. Developed according to traditional recipes from the best dairy farmers in the region. Produced in the village dairy, hand-cared for under strict control and refined through the careful use of ancient salt and red cultures. Ripening for at least 3 months increases the water removal (whey). This means that the content of valuable nutrients from the milk is more intense. The cheese has a typical aroma of fresh mountain milk from its homeland. Bite-like in the dough and aromatic spices on the palate. The harmony of taste and the exceptional quality results in one of the best semi-hard cheeses in Austria. Slightly reduced in fat, it serves the zeitgeist of a modern diet. Ideal for gratinating, racelette and fondue. Also available as a whole loaf: approx. 5kg
