The title reserve can only be achieved by maturing in the cheese cellar for at least 15 months. The wheels are stored under consistent conditions and cared for and turned by hand. The reserve is a hard cheese made from controlled Alpine raw milk and impresses with its excellent, spicy taste the young grass with the many spicy alpine herbs of the Bregenzerwald Alps, and the long maturation is created. The reserve high alpine cheese is made by hand in selected Bregenz Forest alpine dairies above 1500 meters above sea level only during the summer months.
