Cuvee Courage Zero Dosage Brut Nature sparkling wine, 12.5% vol., Ebner-Ebenauer

The base wines for this cuvee come from the 2007, 2008, and 2009 vintages, which were aged together on the fine lees in used wooden barrels before bottling for the second fermentation in 2011. The Cuvee Courage then remained on the lees for 12 years, during which time it was handled every three months to shake up the lees. The sparkling wine was disgorged in August 2023. It took a total of 16 years for this sparkling wine to be ready for consumption. Marion and Manfred handled each bottle almost 60 times-an insane amount of effort on the part of the two.
