DE-OKO-001 Buckwheat is mainly prepared as a soup or groats in Russia and Poland. It is similar to beechnuts, but is much smaller. The rich protein and starch content makes buckwheat, which is not actually a grain but a knotweed plant, a valuable grain. In combination with wheat or rye, it is used to prepare bread, pastries, porridge and groats.
