Saffron - the gold in the kitchen - is obtained from the flower stigmas of the saffron crocus, which are plucked out and dried by hand - 150,000 flowers make 1 kg of threads. The highly volatile safranal, an essential oil, is responsible for the strong, aromatic scent. Picrocrocin produces the bitter-sweet, smoky and earthy taste. Crocin provides the sought-after bright yellow color as a water-soluble substance. Use in the kitchen for e.g. risotto, paella or bouillabaisse and to season seafood.
