The Zite, also known locally as Boccolotti, originally come from southern Italy, particularly the Neapolitan area. They have an elongated, round, perforated shape, a diameter of 7 mm, and are between 1.10 and 1.20 mm thick. The Zite, like di Candele, are broken into irregular pieces before cooking. They are ideal for oven dishes, but can also be served with tasty sauces: with meat or fish sauces, with spicy sauces, or with tasty cheeses such as pecorino, provolone, or caciocavallo. But they also taste great when served vegetarian, e.g. B. with vegetable tomato sauces, with pepperoni, eggplant and zucchini.
