The seeds contain essential oils that give them a spicy, sweet, aromatic aroma. Since these evaporate easily, you should only mortar or grind the seeds when necessary. Cardamom is a common spice in Asian cuisine and is one of the main ingredients in Indian masalas and the curry powder based on them. Cardamom is a little spicy and goes well with meat, fish, vegetables, compotes and puddings. It is also suitable for making sausage and bread and is popular as a cake spice, for marinades or in punch. In Arab countries, its aroma is appreciated in coffee and tea. Green cardamom originally comes from southern India and Sri Lanka. It is now grown in Guatemala and in countries with similar climates.
