The calluna (broom heather) is the character shrub of our heathland areas. The largest and densest heath areas in Europe can be found, for example, in the foothills of the Pyrenees and in Norway; they are a prerequisite for pure, strong heather honey of high quality. In its normal state, this honey is reddish-brown, almost gelatinous, candied. The taste is immediately reminiscent of coffee aromas. Therefore the honey seems rather tart and slightly spicy. The rarity of pure heathland and the difficult, low harvest make this expressive honey a select specialty.
