Schleswig-Holstein`s moist, mild maritime climate promotes the nectar secretion of rapeseed. The bright yellow fields and the lovely scent attract the bees into this early morning period. Due to the high glucose content, the extracted honey quickly turns into a white to yellowish, delicately creamy, mild honey, which is particularly popular in northern Germany.
