Isomalt ® is obtained from beet sugar. The taste is pleasantly sweet, of course. Isomalt ® does not require any additives to create sugar works of art. Just let it melt and you`re done. Isomalt ® can be processed colder than sugar. Sugar figures made from Isomalt ® are not hygroscopic, do not crystallize and can be warmed up again under a red light lamp. Isomalt® is suitable for diabetics and has only half as many calories as conventional sugar.
