This glucose in powder form is used in the canning industry, confectionery and pastries as well as in the production of ice cream, sweets or sorbets. According to the manufacturer`s instructions, the powder content is approx. 4% of the total mass. At 1 kg total mass = 40g glucose powder. You then have to subtract the 40g from the originally required amount of sugar. Instead of 800g fruit puree and 200g sugar, use 800g puree, 160g sugar and 40g gel powder. Mix the sugar and powder together and process normally.
