Almond trees belonging to the family Rosaceae. Basically, sweet and bitter almonds can be distinguished. The sweet are the best selling and popular with confectioners almonds. They have a delicate texture and the characteristic sweet taste. From them is produced, among other things marzipan. Raw bitter almonds are through the cyanide-share highly toxic and can be lethal! However, by cooking or baking, the hydrocyanic acid, at the same time the bitter taste loses. This sweet almonds are blanched, that the brown shell has been removed with boiling water.
