Mace is the delicate orange seed coat that encloses the nutmeg. The aroma is finer and less intense than the aroma of nutmeg and is easier to dose. It is mainly used for pastries, sausages and spice mixtures. Crush the mace pieces so they can fully develop their aroma. Wonderful for Christmas baking!
