The Kasumi K-11 whetstone is suitable for coarse 240 grit pre-grinding and minor repairs to the blade. The 1000 grit is used for sharpening. Grinding recommendation: Soak the stone in water for at least 15 minutes. It should always be wet during grinding. The water together with fine stone abrasion acts like a grinding paste, which enables the grinding process. The knives should be ground at an angle of around 15°. Only you should grind them yourself, because everyone has their own grinding technique. Basically, press lightly with the forward movement at a 15° angle and also pull back loosely at an angle of 15°. The blade can then be finely ground and polished on the Kasumi K-12 grit 3000 and 8000.
