The aroma is reminiscent of anise or fennel, but is even stronger. The taste is strongly sweet and warming. Licorice has always been more of a medicinal plant than a spice. The strong and slightly dominant sweetness of this plant seems to go well with neither sweet nor spicy dishes. However, small amounts of licorice can significantly improve Chinese five-spice powder. Of course, it is traditional to produce licorice by boiling and reducing licorice roots.
