Wijngaard Chevre Gris is aged in special cheese storage rooms for 10 to 12 months. We have specially adapted these cheese storage rooms for the maturation of the Wijngaard Chevre Gris. When designing these cheese storage rooms, we incorporated the experience we gained through the maturation of the Reypenaer and Reypenaer VSOP cheeses. The Wijngaard Chevre Gris is still cleaned and turned by hand every week. The unique taste of the Wijngaard Chevre Gris is achieved by storing the cheese together with other aged cheeses.
