Ingo Holland`s Purple Curry mixture is a wonderful seasoning for white meat: scallops, fish, poultry and rabbit. The red-violet mixture can be easily mixed with oil as a paste and used for marinating. After frying, brush with the paste and fry in butter. Due to the high hibiscus content, this curry has an intense sour note.
